Determination of the Anticarcinogenic Activity of 5-Hydroxymethyl-2-furfural Produced from Grape Must Under in vitro Conditions

Every year, millions of tons food and beverage waste are thrown away unused around the world. The carbohydrates found in create a raw material potential for production high value-added products that used energy, feed pharmacology. One these products, 5-Hydroxymethyl-2-furfural (5-HMF), is by-product simple dehydration carbohydrates. It finds wide use field pharmacy due to its anticancer, antifungal antimicrobial activities. Many studies have stated sugar source with highest conversion rate 5-HMF fructose. For this reason, study, it was aimed realize autoclave sterilization carried out under temperature pressure using grape must waste, which known fructose content, determine anticarcinogenic activity cytotoxicity produced vitro conditions. In determined medium containing DMSO increased percentage, efficiency selectivity more than only water. 5-HMF, saturated salt, were as 97.04%, 68.61% 70.82%, respectively, when organic solvent used. addition, has been from toxic effect on both healthy cells cancer anticancer properties.
